Malay Fried Mee (Mi Goreng)



Ingredients:

Cooking Oil
2 cloves garlic (chopped)
3 tablespoons of chili paste 
1 lb of Yellow Mee (rinsed)
2 eggs
20 dried anchovies (or ikan bilis) (chopped)
4 squids (cleaned and cut into rings)
10 medium prawn
1 stalk of spring onion (cut into small pieces)
2 red chilies (sliced )
1 lime (cut into wedges)
1 tomato (cut into 4)
2 tablespoon of soy sauce
2 tablespoon of dark soy sauce or kecap manis
3 tablespoon of tomato sauce
2 tablespoon of chili sauce
Sugar and salt to taste


Preparation:

Heat the wok and pour in the cooking oil. Add garlic,  chili paste and dried anchovies. Stir fry until fragrant. Add all sauces, squid,prawn and add yellow mee, continue stirring.  Scramble the eggs and mix in with the mee.  Serve hot and garnish with chopped spring onions,tomato and sliced red chilies. Squeeze some lime juice over the noodles before eating.


Ready to eat!!

Malay Pizza



Ingredients


3 cups luke-warm water
11g yeast
1/4 cup sugar
1 tablespoon salt
500 g flour

tomato sauce

shredded cheese

butter


crab stik (topping

sausage(topping)

tuna (topping)

pineaple(in can)(topping)



Directions:


1 Add water, yeast, sugar, and salt to mixing bowl.


2 Let sit 10 minutes. You should see bubbles of yeast


3 Mix in flour conservatively - don't add too much. After mixing it in, keep adding until dough is not wet looking and can be kneaded.


4 Knead dough until smooth.


5 Let rise at least 45 minutes at room temperature.


6 Pre-heat oven to 230 degrees.


7 Split dough into pieces


8 Roll dough out each to the size of your pan


9 Sprinkle butter onto each pan.


10 Place dough onto pans, stretching or squeezing if necessary to fit properly.


11 Spread some tomato sauce onto dough, leaving about an inch around the outside without sauce.


12 Spread some cheese on top of the sauce.


13 Add additional toppings as desired.


14 Bake for 8-12 minutes, or until dough is fully cooked. The bottom of the pizza should be at least a little crispy

Malay Fried Chicken

INGREDIENTS

1 (4 pound) whole chicken, cut into pieces
6 cloves garlic, chopped
5 medium shallot, chopped
1 inch ginger, chopped
4 tablespoons oyster sauce
2 tablespoons chili sauce
1/2 cup vegetable oil

DIRECTIONS

To Marinate: In a nonporous glass dish or bowl, combine the all the ingredient. Mix together. Add chicken pieces and turn to coat. Cover dish or bowl and refrigerate to marinate for at least 1/2 hour.

In a large skillet or wok, heat oil over medium high heat. Add marinated chicken (disposing of leftover marinade) and fry for 20 to 25 minutes or until chicken is crispy and brown and juices run clear.

Hot spicy sauce (sambal).

Ingredients

50 g Dried chillies, softened in water and pounded finely (or can use chili paste)

50g Shallots

1 tsp Dried Shrimp paste (belacan)

2 tbsp Sugar

1 tbsp Tamarind, soaked in 4tbsp water, squeezed and strained

Salt to taste

Oil

Method :

Heat 8 tbsp oil in a wok and fry chilli paste till fragrant. Add the rest ingredient and continue to cook till paste thickens. Cool and serve with coconut rice.

Coconut Milk Rice (Nasi Lemak)


Ingredients

2 cup long grain rice

2 cup coconut milk

1 3/4 water

Salt

2 Cardamon

1 Cinnamon

1/2 inch Ginger

2 Pandan leaves, tie into a knot

3 medium Shallot slice



Preparation:


1. Place rice and the rest of the ingredients into pot.


2. Place pot on the stove over medium heat. Stir well.


3. Continue to stir occasionally until the coconut milk & water come to a gentle boil (stirring will keep the rice from sticking to the bottom of the pot and burning).


4. Once the coconut-water has begun to bubble, stop stirring. Turn down the heat to low (Place lid askew on the pot, so that it is at least 3/4 covered.


5. Allow rice to cook in this way for 15-20 minutes, or until rice has absorbed most of the coconut-water.


6.Turn off the heat. Cover the pot tightly with the lid and allow to sit 5-10 minutes.



Accompaniments to Coconut Rice


The following accompaniments are a must to make the Nasi Lemak authentic and more exciting :-

1) Hard Boiled eggs - peeled and cut into halves for serving


2) Cucumber - peeled and sliced for serving


3) Dried anchovies(or ikan bilis) - these are washed and wiped dry before deep frying them in some oil.


4) Roasted Peanuts - dry roast some peanuts over low fire in a pan until it is golden brown. When cooled, put them in an airtight container before serving

5)hot spicy sauce (or sambal).


The rice is now ready to eat.
